After the broader conversation about rebuilding institutional food systems from the keynote, this web session focuses on the more specific task of making change, often of any sort, in public institutions. I believe that institutions are built to do one thing one way, so when you want to make a change in one part of the institution, you must be ready to do the same in other, seemingly unconnected parts of the institution. I’ll share stories and examples of my attempts to make change and the unexpected outcomes of those attempts.

Joshna Maharaj is a chef, speaker & activist who believes strongly in the power of chefs & social gastronomy to bring values of hospitality, sustainability & social justice to the table.Joshna’s first book, Take Back the Tray (May 2020), captures the lessons & experience from her work in creating a movement to reconnect food with health, wellness, education, and rehabilitation in public institutions around the globe….and it’s a story about how a chef took on the institution and tried to make change.

With 15 years of experience in television, radio, and as a culinary and university instructor, Joshna is an easy, engaging teacher who reimagines the nature of a classroom.

Joshna is an award-winning, two-time TEDx speaker and has just completed a Master’s in Gastronomy at TU Dublin.
